Chicken Pesto Ciabatta sandwich

Ingredients
  

  • 2 ciabatta bread rolls
  • 2 boneless chicken breasts
  • 1/4 cup homemade or store-bought pesto
  • 2 tablespoons garlic bread crumbs
  • 1/4 cup parmesan cheese freshly grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Equipment

  • Large skillet or grill pan
  • Sharp chef's knife
  • Cutting board
  • Mixing bowl
  • Spatula or tongs

Method
 

  1. Prepare chicken by seasoning with salt and pepper
  2. Heat olive oil in skillet over medium-high heat
  3. Cook chicken until golden brown, about 6-7 minutes per side
  4. Slice ciabatta bread and lightly toast
  5. Spread pesto on bread
  6. Top with sliced chicken
  7. Sprinkle garlic bread crumbs and parmesan cheese
  8. Optional: Warm in oven for 2-3 minutes
