chicken and wild rice soup

Wild rice and chicken blend in a rich broth, a true home cooking delight. Every spoonful offers a mix of nutty wild rice, juicy chicken, and creamy texture. It's a classic soup that everyone loves.

Ingredients
  

  • 2 pounds boneless chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 2 carrots diced
  • 2 celery stalks chopped
  • 1 medium onion diced
  • 2 tablespoons olive oil
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Equipment

  • Large soup pot or Dutch oven (6-quart recommended)
  • Sharp chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Wooden spoon or silicone spatula
  • Ladle for serving

Method
 

  1. Preparation time: 20 minutes
  2. Total cooking time: 1 hour
  3. Chop vegetables using your chef's knife
  4. Heat olive oil in soup pot over medium heat
  5. Sauté vegetables until softened (about 5 minutes)
  6. Add chicken and cook until no longer pink
  7. Pour in broth and wild rice
  8. Simmer for 45 minutes
  9. Stir in cream during last 5 minutes
  10. Season to taste
