Chicken and Spinach Casserole

Equipment

  • Large cast-iron skillet or deep cooking pan
  • Cutting board
  • Sharp chef's knife
  • Measuring cups and spoons
  • Wooden cooking spoon

Ingredients
  

  • 2 boneless chicken breasts diced
  • 2 cups fresh spinach leaves
  • 8 oz cream cheese
  • 1/2 cup chicken broth
  • 1 cup pasta penne or rotini
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium heat
  • Sauté chicken until golden brown, about 5-6 minutes
  • Add minced garlic and cook for additional minute
  • Stir in pasta, chicken broth, and cream cheese
  • Simmer for 10-12 minutes until pasta is tender
  • Fold in fresh spinach during last 2 minutes of cooking
  • Season with salt and pepper
