Cheesy Baked Chicken Breasts

This recipe turns a simple weeknight dinner into a gourmet meal. You can make a fancy dish without spending hours cooking. The mix of juicy chicken, rich cheese, and earthy mushrooms makes a dish that everyone will love.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 8 oz 225g mushrooms, sliced
  • 2 cloves garlic minced
  • ½ cup heavy cream or sour cream
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp fresh parsley chopped (for garnish)

Method
 

  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Season the Chicken: Pat chicken breasts dry and season with salt, pepper, garlic powder, and onion powder.
  3. Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and sear for 2-3 minutes per side until golden brown. Remove and set aside.
  4. Sauté the Mushrooms: In the same skillet, add butter and sliced mushrooms. Cook for 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  5. Make the Sauce: Reduce heat to low, then stir in heavy cream (or sour cream). Let it simmer for 1-2 minutes.
  6. Assemble & Bake: Place the chicken back in the skillet (or transfer to a baking dish). Spoon the mushroom sauce over the chicken and sprinkle mozzarella, cheddar, and Parmesan cheese on top.
  7. Bake: Transfer to the oven and bake for 20-25 minutes or until the chicken is fully cooked (internal temperature 165°F/75°C).
