Ingredients
  

  • For the cake:
  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • For the cream cheese filling:
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter softened

Instructions
 

  • Preheat oven to 375°F. Line jelly roll pan with parchment paper.
  • Mix flour, baking powder, and cinnamon in a bowl.
  • Beat eggs and sugar until light. Add oil and carrots. Fold in dry ingredients.
  • Spread batter in pan. Bake for 10-12 minutes.
  • Roll cake in towel. Cool completely.
  • Beat cream cheese filling ingredients until smooth.
  • Unroll cake, spread filling, and re-roll.
  • Chill for 1 hour before serving.
