California Sushi Bowls Recipe

Ingredients
  

  • For the Rice:
  • 1 cup sushi rice or short-grain white rice
  • 1 ¼ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • For the Bowl:
  • 1 cup imitation crab shredded (or real crab)
  • 1 small cucumber diced
  • 1 small avocado diced
  • ½ cup shredded carrots
  • ½ cup sliced radishes optional
  • 2 tablespoons chopped green onions
  • 1 tablespoon sesame seeds white or black
  • 1 sheet nori cut into thin strips (optional)
  • For the Sauce:
  • ¼ cup mayonnaise
  • 1 tablespoon sriracha adjust for spice level
  • 1 teaspoon soy sauce
  • 1 teaspoon lime juice

Method
 

  1. Cook the Rice
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. Combine rice and water in a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  4. Remove from heat and let sit, covered, for 10 minutes.
  5. Mix rice vinegar, sugar, and salt in a small bowl, then stir into the warm rice. Let cool slightly.
