- Preheat oven to 375°F (190°C).
- Sauté vegetables in butter until soft.
- Add flour to create a roux, then slowly stir in stock and cream.
- Mix in seafood and Cajun seasoning, simmer for 5 minutes.
- Line pie dish with one crust, pour in filling, cover with second crust.
- Bake for 30-35 minutes until golden brown.
