cacio e pepe whole roasted cauliflowe

Roasting a whole cauliflower makes for a dramatic presentation that wows dinner guests. It's also very easy to prepare. This dish combines the classic flavors of Romano cheese and black pepper with a golden-brown cauliflower. It's both beautiful and delicious.

Equipment

  • Large baking sheet
  • Parchment paper
  • Sharp chef's knife
  • Measuring cups and spoons
  • Pastry brush
  • Microplane or fine grater

Ingredients
  

  • 1 large whole cauliflower head
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons freshly ground black pepper
  • 1/2 cup grated Pecorino Romano cheese
  • Sea salt to taste

Instructions
 

  • Preheat oven to 425°F
  • Trim cauliflower leaves and create a flat base
  • Drizzle olive oil, season with salt and pepper
  • Roast for 35-40 minutes until golden brown
  • Sprinkle generously with Pecorino cheese
  • Let rest for 5 minutes before serving
