cacio e pepe whole roasted cauliflowe
Roasting a whole cauliflower makes for a dramatic presentation that wows dinner guests. It's also very easy to prepare. This dish combines the classic flavors of Romano cheese and black pepper with a golden-brown cauliflower. It's both beautiful and delicious.
- 1 large whole cauliflower head
- 3 tablespoons extra virgin olive oil
- 2 teaspoons freshly ground black pepper
- 1/2 cup grated Pecorino Romano cheese
- Sea salt to taste
Preheat oven to 425°F
Trim cauliflower leaves and create a flat base
Drizzle olive oil, season with salt and pepper
Roast for 35-40 minutes until golden brown
Sprinkle generously with Pecorino cheese
Let rest for 5 minutes before serving
