cacio e pepe-inspired kale salad

Ingredients
  

  • 1 large bunch of kale stems removed and chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon freshly ground black pepper
  • 1/4 teaspoon sea salt

Method
 

  1. Wash and dry kale leaves using a salad spinner.
  2. Remove stems and chop kale into bite-sized pieces.
  3. In a large bowl, massage kale with olive oil and lemon juice for 2-3 minutes.
  4. Add grated Parmesan, black pepper, and salt to the bowl.
  5. Toss all ingredients together until kale is evenly coated.
