blueberry-banana pancakes

  • cups all-purpose flour
  • 2 ripe bananas mashed
  • 1 cup fresh blueberries
  • 2 large eggs
  • ¾ cup milk
  • 2 tablespoons melted butter
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Method
 

  1. Mix dry ingredients in a large bowl
  2. Whisk wet ingredients in separate bowl
  3. Combine wet and dry mixtures gently
  4. Fold in mashed bananas and blueberries
  5. Heat skillet to medium temperature
  6. Pour ¼ cup batter for each pancake
  7. Cook until bubbles form, then flip
  8. Serve warm with maple syrup
