blueberry-banana pancakes

  • Large mixing bowl
  • Whisk or electric mixer
  • Non-stick skillet or griddle
  • Measuring cups and spoons

Ingredients
  

  • cups all-purpose flour
  • 2 ripe bananas mashed
  • 1 cup fresh blueberries
  • 2 large eggs
  • ¾ cup milk
  • 2 tablespoons melted butter
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions
 

  • Mix dry ingredients in a large bowl
  • Whisk wet ingredients in separate bowl
  • Combine wet and dry mixtures gently
  • Fold in mashed bananas and blueberries
  • Heat skillet to medium temperature
  • Pour ¼ cup batter for each pancake
  • Cook until bubbles form, then flip
  • Serve warm with maple syrup
