Ingredients
  

  • 2 cups whole wheat flour
  • 3 ripe bananas mashed
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Cinnamon crunch topping:
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp chopped nuts

Equipment

  • 9x5 inch loaf pan (non-stick recommended)
  • Large mixing bowls for combining ingredients
  • Measuring cups and spoons
  • Whisk or electric mixer
  • Cooling rack
  • Parchment paper

Method
 

  1. Preheat oven to 350°F
  2. Grease your loaf pan with butter or line with parchment paper
  3. In one of your mixing bowls, cream butter and sugar
  4. Add mashed bananas and eggs, mix thoroughly
  5. Combine dry ingredients separately, then fold into wet mixture
  6. Pour batter into prepared loaf pan
  7. Sprinkle cinnamon crunch topping evenly
  8. Bake for 55-60 minutes
  9. Cool in pan for 10 minutes, then transfer to cooling rack
