  • ½ cup water
  • 12 small flour tortillas or mini taco shells
  • 1 cup shredded cheddar cheese or Mexican blend
  • 1 cup salsa for dipping
  • Optional toppings: sour cream guacamole, shredded lettuce, diced tomatoes, chopped cilantro

Equipment

  • Muffin tin (12-cup)
  • Skillet
  • Wooden spoon or spatula
  • Knife
  • Cutting board
  • Large mixing bowl
  • Cooking spray or olive oil

Method

  1. Prepare the Meat Filling:
  2. In a skillet over medium heat, cook the ground beef (or turkey) until browned, breaking it apart with a spatula.
  3. Add diced onion and cook for another 2-3 minutes until softened.
  4. Stir in taco seasoning and water, and simmer for 5 minutes, until the mixture thickens. Remove from heat and set aside.
  5. Preheat the Oven:
  6. Preheat your oven to 375°F (190°C).
  7. Prepare the Taco Bites:
  8. Lightly grease the muffin tin with cooking spray or olive oil.
  9. Use a round cookie cutter or a cup to cut small circles from the tortillas (about 3-4 inches in diameter) to fit into the muffin cups.
  10. Press each tortilla circle into the muffin tin to form little taco shells.
  11. Assemble the Taco Bites:
  12. Spoon the cooked meat mixture into each tortilla cup, filling each one about halfway.
  13. Sprinkle shredded cheese over the top of the meat.
  14. Bake the Taco Bites:
  15. Bake in the preheated oven for 10-12 minutes, or until the tortillas are golden and the cheese is melted and bubbly.
