baked spinach quesadillas

No need for greasy pans here. Our baked quesadillas get crispy and golden without too much oil. The baking method makes them special in just a few minutes.

Ingredients
  

  • 4 large flour tortillas
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • cups shredded cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Equipment

  • Large baking sheet
  • Parchment paper
  • Cutting board
  • Chef's knife
  • Mixing bowl
  • Cheese grater

Method
 

  1. Preheat oven to 400°F
  2. Sauté mushrooms until golden brown
  3. Add fresh spinach and cook until wilted
  4. Place tortillas on baking sheet
  5. Spread cheese and vegetable mixture evenly
  6. Fold tortillas and brush with olive oil
  7. Bake for 10-12 minutes until crispy
