Prepare the Zucchini – Wash and cut the zucchinis into fries. Make sure they’re of uniform size for even cooking.
Set up the Breading Station – In one bowl, place the flour. In a second bowl, whisk the eggs. In a third bowl, combine the breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper.
Coat the Zucchini Fries – First, dip each zucchini fry into the flour, making sure it’s fully coated. Then, dip it into the egg mixture, and finally coat it in the breadcrumb mixture, pressing gently to adhere.
Preheat the Air Fryer – Preheat your air fryer to 200°C (400°F) for about 5 minutes.
Air Fry the Zucchini Fries – Lightly spray the air fryer basket with olive oil spray to prevent sticking. Arrange the coated zucchini fries in a single layer in the basket. Air fry for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
Prepare the Garlic Aioli – While the fries are cooking, mix together the mayonnaise, lemon juice, minced garlic, salt, and pepper in a small bowl. Adjust the seasoning to taste.
Serve – Once the zucchini fries are crispy, remove them from the air fryer and serve immediately with the garlic aioli for dipping.
