Prepare the Cauliflower – Cut the cauliflower into bite-sized florets. Pat the florets dry with a paper towel to remove any excess moisture, which helps them get crispy.
Make the Batter – In a large mixing bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Slowly add water, stirring until a smooth batter forms that’s thick enough to coat the cauliflower.
Coat the Cauliflower – Dip each cauliflower floret into the batter, making sure to coat them evenly. Shake off any excess batter.
Air Fry the Cauliflower – Preheat the air fryer to 200°C (400°F). Lightly spray the air fryer basket with cooking spray or drizzle the cauliflower with a bit of olive oil. Arrange the battered cauliflower florets in a single layer in the air fryer basket. Cook in batches if needed. Air fry for 15-18 minutes, shaking halfway through to ensure even crisping.
Prepare the Buffalo Sauce – While the cauliflower is cooking, combine the melted butter and buffalo sauce in a small bowl. Once the cauliflower is crispy and golden, remove it from the air fryer.
Toss in Sauce – Drizzle the hot buffalo sauce over the crispy cauliflower and toss to coat. For extra heat, feel free to add more buffalo sauce.
